One of the easiest (and best) things to make with chickpeas is hummus. Hummus is incredibly versatile and you can flavor it with just about anything. Below is a very simple hummus recipe that can be used as a base. You can add just about anything to this base to make a more unique flavor – roasted red peppers, roast garlic, cumin, spices, herbs, or just about anything you can imagine.
Basic Hummus
- 1 Can of chickpeas, drained
- 1/4 cup Tahini
- Juice of 1/2 lemon (more, if you like)
- 1 Garlic clove, smashed
- 1/8 cup Olive Oil
- Salt and Pepper to taste
Blend all of the above in a food processor until smooth. Feel free to add more lemon juice, olive oil, or water to thin out the mixture if its too thick. Serve in a bowl room temp or slightly chilled. You can drizzle olive oil, sprinkle paprika, pine nuts, and/or parsley for serving.
Variations
Using the base recipe above, you can try some of these simple variations
Roasted Red Pepper Hummus
- Add 1 roasted red pepper (Roast it yourself, or jarred)
Thai Curry Hummus
- Replace lemon in recipe above with 2 limes
- 1 tablespoon thai red curry paste
- 1/4 cup coconut milk
Chipotle Hummus
- Add 1 chipotle chili in adobo (more if you like heat)
- Replace lemon in recipe above with 2 limes
Basil Hummus
- Add 1 cup fresh basil
