Day Fifteen

I woke up but didn’t have any ice (still at hotel) so I had just a glass of water. We walked to a restaurant for breakfast. I ordered scrambled eggs, bacon, and whole wheat toast. I also had two cups of coffee and an ice water.

For lunch on the way home we stopped at Panera Bread. I ordered a ½ cup of chicken noodle soup, with ½ order of Cobb salad with an unsweetened mango iced tea.

For dinner we had lamb burgers (ground lamb,harissa,garlic, and cumin) with homemade tzatziki sauce (plain greek yogurt,lemon juice, dill, garlic,olive oil, salt, and pepper) grilled potatoes, grilled zucchini (olive oil & Ras el hanout), and nectarine for dessert.

After dinner we walked for almost 30 minutes for a total of 1.24 miles. My 9 pm snack was a tablespoon of peanut butter.

Day Fourteen

I woke up and had a glass of ice water and had a breakfast of brioche bread french toast with bacon, orange juice and two cups of coffee. Today is going to be different because not only is it Saturday, but Justin and I are going out of town for the night. We are going to Charlotte, NC to watch a soccer match.

When we go to Charlotte we love to eat at Nana’s Home Cooking. It is the best Soul Food restaurant I have ever been to. I always order the small vegetable plate when I go and of course the homemade banana pudding! This time I got the sweet potatoes, black- eyed peas, mac-n-cheese, and a sweet tea.

We walked to the soccer match from our hotel which was probably a little over a ½ mile.When we got to the soccer match I had one sweet tea to drink and Justin and I shared an order of nachos ( cheese and jalapeno only). After the match we walked back to the hotel.

Once back at the hotel we decided that we would walk to eat pizza. I ordered the Hawaiian Pizza with fresh pineapple and prosciutto. The pizza had no sauce only brushed with olive oil. I had also had a water with dinner.  After dinner we walked back to the hotel and we stopped at the Ritz Carlton and order a small Brownie Sundae Gelato.

Day Thirteen

I woke up had a glass of ice water and walked for about 20 minutes which was about a mile. For breakfast I had cheerios, yogurt, and two cups of coffee. Around 12:45 my friend came over and we walked to the park about walked for a little over 40 minutes which was a total of over two miles! After our walk we went to Subway. I ordered a six inch tuna on 9 grain honey oat with spinach, pickles, black olives, mayo and a little bit of salt, a bag of baked cheddar and sour cream chips, and an iced tea. I didn’t have a 4 pm snack because I ate a late lunch (2 pm).

For dinner we were craving KFC so I order the crispy strips, mashed potatoes, cole slaw, and a biscuit. Since I walked three miles today, we didn’t walk after dinner.

Day Twelve

I woke up had a glass of ice water and completed my 10 minute exercises then took a 20 minute walk which equaled to be a little over one mile. For breakfast I had cheerios, yogurt, and two cups of coffee.

For lunch I had Digiorno pizza for one, banana, a handful of pistachios, and water. For my 4 pm snack I had a cup of tea and two pieces of whole wheat toast with butter and honey.

For dinner I had citrus grilled chicken, green onion rice, pickled cucumbers, and water. For dessert sliced mango. We decided not to walk tonight after dinner. My 9 pm snack was a tablespoon of peanut butter.

Day Eleven

After I woke up I had a glass of ice water and then decided I was going to change up my morning routine. I completed my 10 minute exercises and then I went for a 20 minute walk which equaled one mile. When I got home I ate a  breakfast of cheerios, yogurt and two cups of coffee.

For lunch I had leftover Thai curry soup, mixed nuts, and an apple. For my 4 pm snack I had a cup of tea and two pieces of whole wheat toast with butter and honey. I think that has been the best snack yet!

For dinner we had tostadas with the leftover pork from Sunday, homemade refried beans, cherry tomatoes (from our garden), homemade avocado crema,and cheddar cheese. My mom brought a sample of her baking today so for dessert I had one square of peach cobbler bar. After dinner we walked for about 40 minutes which was about 1.8 miles. My 9 pm snack was a tablespoon of peanut butter.

Day Ten

Today my routine has been changed. I got the job I interviewed for, and today I have to go to a health screening. I still had my glass of ice water, but I had to have a quick breakfast of cheerios. When I got back home I completed my 10 minute exercise routine while my coffee brewed. One thing I have learned is that obstacles may come up and you have to alter your exercise routine. If you can’t fit walking or exercising in one day that is OK. I won’t do my AM walk but I am not worried, because I allow myself one day during the week where I can skip it and I’ll be fine.

For lunch I am having a Lean Cuisine (Asparagus and Cheese Ravioli filled with ricotta and parmesan cheese in a roasted red pepper sauce with yellow carrots and asparagus), green grapes, yogurt (since I didn’t eat it for breakfast),and a glass of water.

For my afternoon snack I had ½ cup of cottage cheese with an orange and a few mixed nuts.

For dinner We had homemade Thai Curry ( onion, bell pepper, lemongrass,kaffir lime leaf, ginger, Thai basil, coconut milk, chicken broth, shrimp, and cod) with jasmine rice, a pear, and for dessert a coconut chocolate chip cookie. After dinner we walked for about 35 minutes which was about 1.6 miles. For my 9 pm snack I had a tablespoon of peanut butter.

Day Nine

I woke up and had a glass of ice water. I did not complete my 10 minute morning exercise routine because I like to give my body a rest from it every three days or so. For breakfast I had a bowl of honey nut Cheerios with almond milk, yogurt, a few green grapes, and two cups of coffee. After breakfast i took a 20 minute walk which equaled to a little over a mile.

For lunch I had a leftover barbeque sandwich with cole cole slaw, baked beans, and green beans, followed by an apple and a few slices of cheddar cheese. I also had a glass of water.

For my 4 pm snack I had ½ cup cottage cheese and orange slices.

For dinner we ate out tonight because Justin had a lot of homework. We have a local restaurant close to the house where we like to eat.  It’s nice not going to a chain restaurant. I ordered the chicken salad plate which is house-made, potato salad and coleslaw served with tomatoes, lettuce and crackers. I also had a glass of sweet ice tea. After dinner we walked for about 35 minutes which equaled to about 1.6 miles. For my  9 pm snack I had a tablespoon of peanut butter.

Day Eight

Today is day eight and the start of week two.  After this week I will take my measurements. When I look in the mirror I can see a difference in my body and my clothes are feeling less constricting. I woke up and had a glass of ice water, then completed my 10 minute exercise routine. Justin and I had breakfast which was potato pancakes (four small ones) topped with sour cream, and lingonberry jam, two cups of coffee, and a small glass of orange juice. After breakfast we took a 30 minute walk which equaled to a little over one mile.

For lunch I had leftover Chinese food from Friday night, an orange, banana, and a glass of water. For my 4 pm snack I made roasted chickpeas.

For dinner we had homemade smoked BBQ pork, baked beans, a vinegar based cole slaw, green beans, and a glass of water. After dinner we walked for about 20 minutes which was a little bit over a mile. In total today I have walked 2.4 miles.

For snack I had made a homemade Blueberry Galette. I must admit I had two pieces with heavy cream!!

Day Seven

I woke up had a glass of ice water, then completed my 10 minute morning workout. I then had a breakfast of bacon, scrambled eggs, toast with strawberry jam, 2 cups coffee, and a glass of orange juice. After breakfast Justin and I walked at the park for about 30 minutes which equaled to 1.3 miles.

For lunch I had a half of a pastrami sandwich with cheddar cheese, horseradish mayo, and spicy brown mustard. I also had half a small bag of Lay’s barbecue potato chips, deli pickle, and glass of water.

For my 4 pm snack I had a little bit of yogurt followed by a few pretzel sticks with hummus.

For dinner we had Leeks Fettuccine followed by a nectarine and a few grapes. I also had a glass of water. After dinner we walk for about 25 minutes which equaled to a little over one mile.

My one weakness is ice cream, I could eat it everyday.  I have decided that my ice cream day will be Saturday, so for my 9 pm snack I had a ½ cup Haagen Dazs Dulce de Leche ice cream.

This is the end of my 1st week. I don’t think I have done too badly. According to RunKeeper I have walked a total of 15.5 miles  and burned over 1000 calories! So proud of myself!

Day Six

I woke up had a glass of ice water,and then exercised for about 10 minutes. For breakfast I wanted toast, but I remembered that I will be having pasta and bread for dinner so I stuck with my steel cut oats, yogurt,  and two cups coffee. I also had about a ½ cup green grapes. After breakfast I walked for 15 minutes which totaled to almost a mile.

For lunch I had a frozen entree of pork with pinto beans,creamed spinach, a mandarin orange, one piece of dark chocolate, and a glass of water. For my afternoon snack I had pretzel sticks with hummus.

For dinner we decided at the last minute not to cook and we ordered Chinese take out. I ordered the Chicken with Chinese Vegetables (cabbage, carrots, broccoli, zucchini, onions, squash, bamboo shoots, and water chestnuts) with steamed rice, and two crab rangoons. I also had a coconut chocolate chip cookie after. We did not walk tonight. I had a tablespoon peanut butter for my 9:00 pm snack.

Day Five

I woke up and had a glass of ice water,  but I did not exercise or walk in the AM because I was sore; so I gave my body a rest. I had the usual breakfast of steel cut oats, yogurt,  and two cups of coffee. I added a banana to my breakfast because I was going grocery shopping later in the day and wouldn’t be home to eat lunch at my usual time of 1:00.

For lunch I had leftovers from the night before, which was grilled shrimp, bean salad, fennel and apple slaw.  As a special treat I had a Pepperidge Farm coconut almond chocolate chip cookie because I got a call that I have a job interview tomorrow!

For my afternoon snack I had ½ cup of cottage cheese with cantaloupe and about a ⅛ cup mixed nuts.

For dinner I had Cuban Chicken which is chicken marinated in olive oil, garlic, and oregano ( 1 bone-in skin-on thigh), yellow rice ( rice, bell pepper, garlic, chicken broth), and steamed broccoli. For dessert I had a plum. After dinner I walked for about 40 minutes for a total of about 1.6 miles. I had a tablespoon peanut butter for my 9 pm snack

Day Four

I woke up and had a glass of ice water then I completed my 10 minute morning exercise routine. For breakfast I had steel cut oats, yogurt, and two cups of coffee. After breakfast I took a 20 minute walk with the dog which came to be one mile.

For lunch I had a banana sandwich. Never heard of that one?? Well it is a southern favorite and don’t knock it until you have tried it! It’s two pieces of bread, I used whole wheat with olive oil mayo and you just slice the banana and there you have one great sandwich. With the sandwich I had plain potato chips. When you look at the label (Lay’s brand) there are three ingredients: potatoes, vegetable oil, and salt. I love a good salty plain chip! I also had an apple, one piece of dark chocolate, and a glass of water.

For afternoon snack I had three whole grain crackers with three slices of extra sharp cheddar cheese and handful of almonds.

For dinner I had grilled shrimp which had been marinated in olive oil and smoked Spanish paprika. A bean salad with cannellini beans, grated roma tomato, minced red onion and green bell pepper, green onion, with olive oil, salt, and white wine vinegar. I also made a fennel and apple slaw with an olive oil, white wine vinegar, honey and orange juice vinaigrette, also cantaloupe and a glass of water.

After dinner we walked for about 35 minutes for a total of 1.6 miles. My 9 pm snack was a tablespoon of peanut butter.

Day Three

I woke up and had a glass of ice water, then completed my 10 minute exercise routine. My breakfast was a bowl of steel cut oats with butter,sugar,and almond milk.I also had greek yogurt, and two cups of coffee. It is pouring rain so I won’t get my am in walk in.

For lunch I had leftover grilled potatoes and bratwurst on a bun with sauerkraut and spicy brown mustard. I also had a deli pickle,banana, one piece of dark chocolate and a glass of water. Around 3 pm it stopped raining so I went for a 20 minute walk which equaled to about one mile. My 4 pm snack was cottage cheese with blackberries.

Since Justin and I cook 6 out of the 7 days we like to go out to eat once during the week. Tonight it was Mexican. I had a grilled chicken breast with a mango chipotle sauce served with grilled vegetables, rice and beans, and of course a few chips with the house salsa. I also had a glass of sweet tea (hey, I am a Southern girl!) After dinner we walked for about 40 minutes at the park for a total of 1.6 miles. So far this week I have walked eight miles! I use a free app called RunKeeper to keep track. I can’t wait to see how many miles I will have at the end of the week. For my 9 pm snack I had tablespoon of peanut butter.

Day Two

Today I woke up had a glass of ice water and completed my 10 minute daily exercises. After that I had a breakfast of steel cut oats, greek yogurt, and two cups of coffee. I included butter, sugar, and unsweetened almond milk in the oatmeal and half and half and sugar in my coffee. After breakfast I took the dog for a walk at the park. The walk took 20 minutes for a total of about 1 mile.

For lunch I had a Lean Cuisine. It is one of the new marketplace meals that that company has available. It was the Vermont White Cheddar Mac & Cheese with organic pasta and real cheese. Before I bought it I looked at the ingredient list  and there was nothing “fake” listed. With the mac & cheese I had frozen peas cooked with chicken stock, butter, and kosher salt. I also had a plum and one piece of dark chocolate and a glass of water.

For my afternoon snack I had a ½ cup of cottage cheese with a mandarin orange and a handful of almonds.

For dinner I had bratwurst on a bun with spicy brown mustard and sauerkraut, grilled yukon gold potatoes, and grilled vegetables which consisted of squash, green bell and anaheim peppers, japanese eggplant (all from our garden), onions, and portobello mushrooms. I also had a glass of water

After dinner we walked to the park for about 35 minutes which ended up being 1.6 miles. For my 9:00 pm snack I had a piece of dark chocolate.

Day One

I started the day with a glass of ice water. I then weighed and measured myself.  I am 41 years old. I am 5 feet 0 inches and my weight is 143.8 pounds, and my measurements are as follows:

  • Chest – 39.5
  • Waist  – 34
  • Hips – 40.5
  • Thighs – 23.5
  • Arms – 11.5

Sunday is one of the few days that Justin (my husband) and I eat breakfast together. I am a lover of just about all things french and when I see brioche bread I grab it up to make french toast!.  We soaked four pieces of bread in egg and a little bit of half and half and cooked it in about half a tablespoon of butter. We each had two pieces of the french toast. I also had about four ounces of orange juice and two cups of coffee. I usually measure my juice because it is high in sugar. I also include half and half and about one teaspoon of sugar in each cup of coffee that I drink.

I am lucky because I live in walking distance of a park with a nice walking trail. About 20 minutes after breakfast I walked to the park for about about 22 minutes which was a total of 1.05 miles.

For lunch I had a bacon lettuce and tomato sandwich on whole wheat bread with olive oil mayo and a toasted coconut greek yogurt. I also had a glass of water.

For my 4:00 pm snack I had a ½ cup of cottage cheese with a mandarin orange cup. The cottage cheese has protein to help keep me full, and the sweet fruit pairs well with the salty sour taste of the cottage cheese.

For dinner we had tomato braised chicken thighs with olives and capers over polenta. We also prepared sauteed fennel with bread crumbs and parmesan cheese and a small glass of wine. For dessert we had a nectarine.

After dinner we walked for about 36 minutes for a total of 1.6 miles.
